CITRUS RICOTTA PANCAKES
YIELD 4 CUPS BATTER INGREDIENTS
1 cup ricotta cheese
1 cup all-purpose flour
1 teaspoon baking powder
6 egg yolks
6 egg whites
1 cup milk
1Ã¢â€ž2 cup honey
Whip egg whites to soft peaks.
Combine remaining wet ingredients.
Add wet ingredients to dry ingredients, fold egg whites into batter.
Pour 1Ã¢â€ž4 cup servings of batter onto griddle. Cook until done on one side. Flip and cook until done.
